Farm-to-Fork. Seed-to-Plate. Farm-to-Table. It doesn't matter what you call it, there are all types of events, themes, and definitions for celebrating our agricultural diets and lifestyles.

Farm-to-table (or farm-to-fork) refers to the stages of the production of food: harvesting, storage, processing, packaging, sales, and consumption. Farm-to-table also refers to a movement concerned with producing food locally and delivering that food to local consumers. Linked to the local food movement, the movement is promoted by some in the agriculture, food service, and restaurant communities. It may also be associated with organic farming initiatives, sustainable agriculture, and community-supported agriculture.

Dublin Farmers' Market: August 14th

Tomatoes, tomatoes, tomatoes... It's tomato season at the Dublin Farmers' Market! 

Scalloped Tomatoes from Saveur Magazine

4 cups fresh bread crumbs
¼ cup melted butter or extra-virgin olive oil 
2 tbsp. chopped fresh chives
2 tbsp. chopped fresh parsley
1 tbsp. fresh thyme leaves
Salt and freshly ground black pepper
6 ripe tomatoes, thickly sliced

1. Preheat oven to 375°. Combine bread crumbs, butter (or oil), chives, parsley, thyme leaves, and salt and pepper to taste.

2. Press half the bread crumb mixture into a large baking dish to form a "crust." Bake until lightly golden, about 10 minutes.

3. Remove dish from oven, arrange a layer of tomatoes over bread crumbs, and sprinkle with more bread crumbs. Repeat process until tomatoes are used up, ending with a layer of bread crumbs. Bake until crumbs are golden and tomatoes are warm, about 10 minutes.

Are you 18–24 years old with an interest in HORTICULTURE or LANDSCAPING?

The Franklin County Green Corps Jobs Program provides horticulture and landscaping training to those interested in obtaining a career in the green, environmental and agricultural industries. Participants work side-by-side with employees at Franklin Park Conservatory and Botanical Gardens learning skills in horticulture, landscape and garden maintenance and green practices. Concentrated classroom and hands-on training, including guest speakers and field trips to local businesses, provide comprehensive preparation so participants may confidently enter the job market at the end of the 32-week training program.

Dublin Farmers' Market: July 10th

It's the second Wednesday of the month, which means it's time for Whole Foods Market to join us! Visit the market, collect recipe ideas, and shop for local goods. In case you missed their first visit, here's the recipe.

Tuscan Summer Asparagus

1 bunch asparagus, ends trimmed
1/2 cup prosciutto, julienned
1 medium shallot, minced (about 1 1/2 tablespoons)
1 1/2 tablespoons extra virgin olive oil
1 cup grape tomatoes
1 teaspoon salt
1/4 teaspoon fresh cracked pepper
1 teaspoon fresh thyme
1/2 cup toasted pine nuts
1/2 lemon, juiced and zested
balsamic reduction

In a large stock pot, bring salted water up to a boil. Blanch asparagus spears for 1 1/2 minutes, remove and shock immediately in a large container of ice water. This will stop the cooking process and allow for the asparagus to retain its bright green color. Drain the asparagus and allow to dry a couple minutes.

In a large skillet heat olive oil over medium heat, add prosciutto and cook just until prosciutto begins to brown. Add shallots, asparagus, and season with salt and pepper. Continue cooking a couple minutes, but not disturbing asparagus as this encourages it to brown and caramelize. Add lemon and thyme and toss to evenly disperse in asparagus. Place asparagus on serving plate and put skillet back over heat.

Once skillet heats up again, add tomatoes until they just start to blister, then add a drizzle of balsamic, toss and lay over asparagus on serving plate. Garnish with pine nuts and drizzle with balsamic reduction.

Dublin Farmers' Market: May 29th

Strawberries, strawberries, strawberries! 
They're here, but not for long. Strawberries have a short season, usually lasting 4-6 weeks, depending on the weather. So whether you're canning, freezing, or just snacking, stock up while you can.

In the mood for a quick, but delicious strawberry jam? Try this recipe from Martha Stewart.

Quick Strawberry Jam

1 quart hulled strawberries
1/2 cup sugar
2 tablespoons fresh lemon juice


In a food processor, process strawberries until coarsely chopped. Transfer to a large skillet and stir in sugar and lemon juice. Cook over medium-high, stirring frequently, until jam is thickened and bubbles completely cover surface, 9 to 10 minutes. Transfer jam to a jar and let cool to room temperature. (To store, seal jar and refrigerate, up to 10 days).

Yield: 1 3/4 cups

Dublin Farmers' Market: May 15th

You know, when you get your first asparagus, or your first acorn squash, or your first really good tomato of the season, those are the moments that define the cook's year. I get more excited by that than anything else.

It's a delicious time of year for sure! Asparagus and strawberries are just the beginning of a bountiful farmers' market season! This week, Hirsch Fruit Farm will bring loads of asparagus for you to grill, saute, steam, wrap in bacon, or make into soup. Here's a recipe from celebrity chef, Emeril Lagasse.

Asparagus Soup

3 pounds fresh asparagus, rinsed
8 cups chicken stock
4 tablespoons unsalted butter
1 cup minced shallots
1 cup minced leeks, whites only, well rinsed
1 tablespoon minced garlic
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1/2 cup heavy cream
1/4 cup finely grated Parmesan, garnish

Trim the attractive top tips from the asparagus, about 1 to 1 1/2 inches in length. Cut the woody stem ends from each spear and reserve. Cut the remaining tender stalks into 1/2-inch pieces.

In a medium pot, bring the stock to a boil. Add the tough woody stems, lower the heat and simmer to infuse with asparagus flavor, 20 to 30 minutes. Remove with a slotted spoon and discard, reserving the stock.

Add the decorative tips to the stock and blanch until tender, 1 to 1 1/2 minutes. Remove with a strainer and refresh in an ice water bath. Drain on paper towels and reserve for the garnish. Reserve the stock.

In a medium stockpot, melt the butter over medium-high heat. When foamy, add the shallots and leeks and cook until tender, about 3 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the chopped asparagus stalks, salt, and pepper, and cook, stirring, for 2 minutes. Add the reserved broth and simmer until the asparagus are very tender, 15 to 20 minutes. Remove from the heat.

With a hand-immersion blender or in batches in a food processor, puree the soup until smooth. Adjust the seasoning, to taste. If serving right away, return to medium heat and add the cream and reserved asparagus tips. Cook, stirring, until the soup is warmed through, about 3 minutes.

Alternatively, if serving the soup later, do not add the cream and let cool at room temperature (or in an ice water bath). Cover and refrigerate. Before serving, add the cream and asparagus tips, and warm the soup gently over medium heat, stirring occasionally.

Yield: 8-12 servings

Dublin Farmers' Market: May 8th

A journalist recently asked, "Why are farmers' markets gaining so much popularity lately?"

While there are plenty of reasons for the growth and momentum of farmers' markets, it's the simple fact that consumers want a greater connection with their food source. They want to know who grew it, where they grew it, when it was picked, what's the variety, how to cook it, how to store it... They want to ask questions. And they want to ask the farmer, the baker, or the jam maker. Ask the average grocery store clerk about the variety of carrots you're buying. Do you suppose they know, or care?

People want to feel more connected to the food that graces their table. At the Dublin Farmers' Market, you're talking to the farmer or the baker. They'll tell you when they picked it. Celebrate the farm, the earth, and good food at the Dublin Farmers' Market this Wednesday! The Dublin Farmers' Market will be open every Wednesday, rain or shine, May 1st through September 25th, and this year will be open from 3:00-6:00PM. 2013 Dublin Farmers' Market

Friends of the Dublin Farmers' Market... Happy New Year!

The Dublin Farmers' Market will open on Wednesday, May 1st and be held rain or shine through September 25th, and this year will be open from 3:00-6:00PM. Again in 2013, the market will be hosted by Oakland Nurseries at 4261 West Dublin Granville Road, just minutes from Historic Dublin and Sawmill Road.
